Avocado Hummus Sandwich

So I’m not quite sure what the best name is here… hummole? Guacamolus? I’m struggling because the mixture here is very much in between hummus and guacamole, so you know what that means: avocados+chickpeas.  You guys must think I’m obsessed.  Really it’s just because it’s summer, I promise.

This is a very functional, simple food.  The avocado flavor is what you ride on for this dish.  This is a pleasingly round food, nutritionally speaking: protein from the chickpeas, fats from the avocado, carbs from the bread.  Yay!  You’ll feel so pleasantly satiated after eating it.  The lemon mixed in adds only a little flavor and is mostly to keep the mixture from turning brown if you make enough to save for tomorrow.    Plus, it’s a cold sandwich, and you know how I feel about cold food this time of year.  Muy bueno.

1/2 can chickpeas, rinsed and shells removed (optional, but recommended)
1 avocado
2 Tbsp lemon juice/juice of 1/2 lemon
1 tsp lemon pepper
1 1/2 tsp garlic salt
2 slices bread (go for whole wheat!)
Optional: lettuce/tomato/onion other sandwich fixin’s

Directions

Wash and remove shells from the chickpeas.  Reserve a handful of chickpeas for later. Put the rest of the chickpeas in a food processor and pulse until fairly minced.  Do not pulse so much that it becomes smooth.  You’re not looking for hummus consistency here.

Cut the avocado into big slices.  Reserve one slice and cut into bitesize chunks.  Combine the processed chickpeas with avocado slices in a bowl using a fork, like if you were making guacamole.   Add in the lemon juice, lemon pepper, and garlic salt, stirring to combine.  Once combined, add in the reserved chickpeas and avocado.  Spread as much as you like into a sandwich and munch away!

Notes:  Only reserve the chickpeas and avocados if you want a chunky texture.   If you like smooth, process all chickpeas and squish all avocados.  If you -really- like chunky, don’t process the chickpeas at all… just use a fork to squish it all together.
